Our Oysters

Tasmania’s cool climate, clean environment and the pristine Southern Ocean waters combine to grow our beautiful, fresh oysters. The health and taste of oysters are closely linked to the cleanliness of the waters and bays, and monitoring and testing the waters are part of our daily routine. Oyster racks provide a habitat and shelter for other marine animals and plants, such as mussels, barnacles and seaweed. This in turn attracts larger species of fish. Dolphins regularly visit our bay.

And not only are farmed Pacific Oysters tasty and good for the environment: they are a source of high levels of essential nutrients, such as Omega 3, Iron, Magnesium, Iodine and Selenium.

Our two leases are spread over both intertidal and subtidal areas, enabling us to search out optimum growing conditions. We therefore consistently grow oysters of the highest quality, and can supply them at any time in the year.

It takes two to four years for our oysters to be ready for harvest. Our range of stock sizes: buffet, standard, and large, means that we can cater to a wide variety of customers. Oystas Bruny Island is proud to be a supplier of live oysters to some of Hobart’s leading restaurants and interstate markets.
